The difference between jamás and nunca seems to be a subtle one, with jamás being a little stronger. For instance, I'd say "Nunca lo he visto," which doesn't reach quite as far back in time as "Jamás lo había visto".

You can also use it as an intensifier: nunca jamás, which would be kind of like "never ever."

Like most things, it's just the feeling you have after hearing them a lot.
